- olive oil
- garlic powder
- salt
- black pepper
- sour cream
- cheese
- chives
- steak
- olive oil
- garlic powder
- black pepper
- salt
- unsalted butter
- dried rosemary
- dried thyme
- shallots
- fresh parsley
- roasted garlic
- black pepper
- red pepper flakes
Method
- 1
Wash and dry 3 large russet potatoes.
- 2
Pierce the potatoes all over with a fork.
- 3
Coat the potatoes with olive oil.
- 4
Season generously with a mix of garlic powder, salt, and pepper. Rub the seasoning all over the skins.
- 5
Preheat your grill to approximately 350-400°F (175-200°C).
- 6
Place the seasoned potatoes directly on the grill grates.
- 7
Cook for about 45-60 minutes, or until the skins are crispy and the inside is tender. Turn them occasionally for even cooking.
- 8
While the potatoes are grilling, place the cubed steak in a large bowl.
- 9
Drizzle with olive oil and season with garlic powder, salt, and pepper.
- 10
Mix with your hands until the steak is evenly coated.
- 11
Place a flat-top griddle or large cast-iron skillet on the grill to heat up.
- 12
Add a drizzle of oil to the hot griddle.
- 13
Spread the seasoned steak cubes in a single layer on the griddle.
- 14
Cook for 3-5 minutes, stirring and flipping frequently with spatulas, until browned and cooked to your desired doneness.
- 15
Remove the cooked steak from the griddle and set aside.
- 16
In a bowl, combine the melted butter, rosemary, thyme, minced shallots, fresh parsley, squeezed roasted garlic, black pepper, and red pepper flakes.
- 17
Stir until all ingredients are well combined.
- 18
Once the potatoes are cooked, carefully remove them from the grill.
- 19
Slice each potato open lengthwise, but not all the way through.
- 20
Gently squeeze the ends to open the potato and fluff the inside with a fork.
- 21
Add sour cream, shredded cheese, and chopped chives into the potato. Mix it into the fluffy interior with a fork.
- 22
Generously stuff the potato with the cooked steak bites.
- 23
Drizzle the garlic herb butter over the steak and into the potato.
- 24
Serve the steak-loaded potatoes immediately while hot. Enjoy
