Sweet Potato Burger Bowl
A delicious and healthy Sweet Potato Burger Bowl that can be prepared in 30 minutes.
Ingredients

- 93% lean ground beef
- garlic powder
- onion powder
- smoked paprika
- beef broth
- Worcestershire sauce
- reduced-fat shredded cheese
- nonfat Greek yogurt
- light mayo
- Kewpie mayo
- sweet relish
- yellow mustard

- white vinegar
- salt
- paprika

Start by washing the sweet potatoes. Cut them into small, even cubes.

Place the cubed sweet potatoes into a large bowl. Spray with avocado oil, then season with salt, pepper, and cornstarch. Toss well to coat. Transfer the sweet potatoes to an air fryer basket. Air fry at 400°F (200°C) for 20 minutes or bake in an oven at 425°F (220°C) for 30-35 minutes until golden brown and crispy.

While the potatoes are cooking, prepare the sauce. In a bowl, combine the light mayo, nonfat Greek yogurt, mustard, grated white onion, sweet relish, salt, white vinegar, and paprika. Whisk until all ingredients are well combined and the sauce is smooth.

Place the lean ground beef in a hot pan. Season with salt, pepper, smoked paprika, onion powder, and garlic powder. Press the beef down to form a large patty and allow it to sear on high heat until a golden-brown crust forms.

Break up the seared beef into crumbles using a spatula or meat chopper. Deglaze the pan by pouring in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan. Turn the heat to low.

Sprinkle the shredded cheese over the ground beef and allow it to melt.

Begin assembling the bowls. Start with a layer of the cooked sweet potatoes at the bottom of each bowl.

Add a generous portion of the cheesy ground beef mixture on top of the sweet potatoes.

Top with shredded lettuce, diced tomatoes, diced red onions, and diced pickles.
