Tacos Gobernador (Shrimp Tacos)
Years ago I had the most delicious Tacos Gobernador or Shrimp Tacos that I’ve ever eaten at a restaurant in Austin Texas. I’ve literally dreamt about them. Fast forward to this week when I saw a reel by Alfredo Garcia @freddsters making them and I swear I dropped to my knees. . They were as good as I remember!🌮🌮
Ingredients
- shrimp
- oil
- poblano peppers
- onion
- garlic
- cumin
- smoked paprika
- salt
- pepper
- chipotle peppers in adobo
- adobo sauce
- Roma tomatoes
- corn tortillas
- cheese
Method

Heat oil in a large pan over medium-high heat.

Add the garlic, onion, and poblano peppers. Cook for 3-5 minutes until the vegetables have softened.

Push the vegetables to one side of the pan. Add the chopped shrimp to the other side, along with the cumin, smoked paprika, salt, and pepper.

Cook the shrimp for 2-3 minutes, then mix it in with the vegetables.

Add the minced chipotle peppers and adobo sauce. Cook for 2 more minutes.

Mix in the diced tomatoes and cook for another 2 minutes. Taste the filling and adjust seasonings if needed. Remove the filling from the heat.

To assemble the tacos, place a corn tortilla in an oiled skillet over medium heat. Coat both sides of the tortilla with oil.

Add a layer of shredded cheese to one half of the tortilla.

Top the cheese with the shrimp filling.

Add more shredded cheese on top of the filling.

Fold the tortilla in half to form a taco.

Cook for approximately 1 minute per side, or until the taco is crispy and the cheese is melted and browned.

Repeat with the remaining tortillas and filling. Serve hot with cilantro salsa.
