The Ultimate Summer Slow Cooker Dinner
Tender BBQ chicken, fluffy baked potatoes, and sweet corn on the cob, all cooked together but kept separate with handy foil layers.
Ingredients
- bone-in chicken thighs
- BBQ seasoning
- BBQ sauce
- russet potatoes
- corn on the cob
- butter
- cheese
- sour cream
- brown sugar
- paprika
- black pepper
- kosher salt
- garlic powder
- onion powder
Method

Place the chicken pieces in the bottom of the slow cooker.

Generously cover the chicken with the BBQ seasoning blend.

Drizzle BBQ sauce over the seasoned chicken.

Cover the chicken layer with a sheet of aluminum foil, tucking it in around the sides to create a sealed layer.

Place the scrubbed and oiled potatoes on top of the foil.

Cover the potato layer with another sheet of aluminum foil, creating a second sealed layer.

Place the corn on the cob, with husks on, on top of the second foil layer.

Place the lid on the slow cooker and cook on the low setting for 6-8 hours.

Once cooked, carefully remove the lid and each layer of food. First, use tongs to take out the corn on the cob.

Then, remove the top foil layer to reveal the potatoes, and take them out.

Finally, remove the bottom foil layer and serve the BBQ chicken.

Plate the BBQ chicken, a baked potato, and corn on the cob. Slice open the potato and add your desired toppings like butter, sour cream, and shredded cheese.
