Tomato and Burrata Tarte Tatin
A savory tarte tatin featuring heirloom and cherry tomatoes, candied onions, and burrata, all baked on a shortcrust pastry base.
Ingredients

- honey
- balsamic vinegar

Method

On a sheet of parchment paper, drizzle honey in a large circle.

Drizzle balsamic vinegar over the honey in a swirl pattern.

Sprinkle pine nuts over the honey and vinegar base.

Arrange thick slices of various heirloom tomatoes over the base, followed by cherry tomatoes.

Top the tomatoes with candied onions.

Season generously with salt, pepper, and dried herbs.

Cover the entire arrangement with a sheet of shortcrust pastry.

Tuck the edges of the pastry down and around the filling.

Brush the top of the pastry with egg yolk.

Bake at 1800C (3500F) for 30 minutes.

Once baked, carefully place a serving plate over the tart and flip it over.

Gently peel off the parchment paper.

Place a whole burrata in the center of the tart.
